February 2025 Spotlight -Khaled Khweis  -Arabian Nights Hummus 

Arabian Nights Hummus was born in Taos, New Mexico, way back in 1999—the same year Heyam Khweis welcomed her fifth child into the world. Over the next few years (and another kid later!) Heyam’s hummus became a truly authentic Palestinian staple across New Mexico and Colorado.
